Everyone seems to be making home-made banana bread amidst the coronavirus pandemic. This sweet loaf is a great way to use your overripe bananas for a tasty treat while staying safe at home. Bananas originated from Southeast Asia, where many varieties of wild bananas still grow today. In the Philippines, the banana is the most common fruit you’ll find in every home and is often used as a sweet dessert after a meal. This popular fruit worldwide offers many health benefits as a source of energy-producing carbohydrates, vitamin B6, vitamin C, fiber, and antioxidants. Specifically, potassium is rich in bananas and is an essential mineral and electrolyte that many people lack in their diet. Potassium plays a crucial role in lowering blood pressure, protecting against osteoporosis, and reducing the risk of kidney stones.

Healthy Quarantine Banana Bread - Makes 1 loaf

  • 1/4 cup coconut oil melted
  • 1/2 cup honey
  • 2 eggs
  • 3 mashed bananas
  • 1/4 cup almond milk
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups almond flour
  • Optional: 1/2 dark cup chocolate chips or nuts

Directions:

  1. Preheat oven to 350 degrees F.
  2. Grease loaf pan
  3. Mix all ingredients in a big bowl 
  4. Pour into loaf pan
  5. Bake for 45-55 minutes, until golden in top.
  6. Let cool and enjoy!
